Sausage noodle casserole

i realized that i twittered that i would post the recipe here and then didn't follow through. Well i am working on that, follow through i mean. here's the recipe and I promise your kids will love it. ((This is dedicated to my Mother in Law; though i am sure i have slaughtered her original recipe.))

1/2-3/4 bag of egg noodles
1 lb ground sausage (my kids like sage or mild)
2 cups shredded cheddar or colby jack cheese
1 can cream of chicken soup
1 8 oz container of sour cream (i am addicted to daisy)
4 slices of bacon
salt and pepper to taste

Preheat oven to 375 degrees

cook noodles to the specifications on the bag.
fry sausage in a skillet, set to the side.
while the sausage is cooking; mix 3/4 of the cheese, soup, sour cream, salt and pepper.
fry the bacon, cool and crumble.
combine cooked noodles and sausage into the noodles mixture and put into square or rectangle casserole dish (9x9??).
sprinkle crumbled bacon and top with the rest of the cheese.
cook covered for 10 minutes remove cover and bake for an additional 15-20 minutes until heated through.

VEGETARIAN
- I have made this vegetarian (not Vegan) as well. switch out the sausage with Morning Star farms veggie sausage patties or links. and change out the cream of chicken with cream of celery.
